New recipe: been cooking briskets for years. I get an untrimmed brisket only, and I look for the floppiest brisket I can find.
It has to at least bend half way in two. This time, I slathered it them in spiced mustard for 7 days. The vinegar is supposed to break
the meat fibers down. Wipe most of the mustard off, the rest will flake off, and it is supposed to not taste like mustard at all. We'll see.
I split pecan wood from a tree I cut down, and gonna use that for my smoke ring. I've always used hickory, then after 5 hours, I wrap them
in foil and toss in a stick of butter <real butter, margarine sucks> and cook them always at 225 degrees, start to finish. Another 11 hours.
I cook my briskets for 16 hours total. They always come out perfect. It's labor intensive, but it's fool proof. By the time I've bbq-ed for
16 hours <and drank beer, it's a must>, I'll let them in an igloo cooler and go to bed. Next day they're warm, tender, and tasty. Every single time.

 

Fat side up, LOTs of seasoning to make a crisp crust, and your wife will take all the credit. Just roll with it.

 

I spent three days trying to remind people who have gotten their feelings hurt that this site is no reflection on them and whoever is being nasty is not worthy of their reflection.
